Seafood Lab attends Louisiana Fisheries Forward Mini Summit

The Seafood Processing Demo Lab shared some of the work on value added products, such as high-quality seafood nuggets (boulettes) from seafood processing byproducts using a deboner machine at the Louisiana Sea Grant Louisiana Fisheries Mini Summit held at the Slidell Municipal Auditorium. Mince was produced in lab from catfish frames, small, cooked shrimp and processed crab bodies. Mince recovery ranges from 35 to 60%.  Other minces we produced include that from bony buffalo fish and king snake eel.  This effort with mince allows for more complete utilization and potential profits from our seafood supply stream.
