Seafood Field Day -Capitalizing on Louisiana Heritage Seafood Species
October 22, 2024. Over 30 chefs, culinary students, seafood industry and community leaders attended the Seafood Field Day. LSU AgCenter Executive Associate Vice-President and LCES Director Dr. Tara Smith, and Assistant Secretary of Wildlife and Fisheries Ryan Montegut joined the event. Program’s Executive Director Thomas Hymel and Research Director Dr. Evelyn Watts led discussion about Garfish, Buffalo Fish, Gaspergou, Blue catfish, and Flat Head Catfish fisheries, market opportunities and consumer desires. Smoked fish, mince, and grinded fish was featured through creative valued added products.
